WHAT IS DAMGIR?
"Dam-gheer" : The steam catcher
A fabric cover that is used regularly in making Persian dishes. A Dam-gir goes over the lid of your pot when you want to cook rice or stew (Khoresh). It prevents the condensation from dripping into your dish and affecting its wonderful flavours.
The rice will become soft and tasty whilst your khoresh will have optimum consistency.
